I work at Casting Networks on the Talent Support Team and want to share this simple delicious treat with everyone. These cupcakes are simple to make and only require a few ingredients. These cupcakes have always been special to me because my mother, twin and I have been making them since I was a little kid and they have always been a family
favorite.



Mini Chocolate Cream Cheese Cupcakes

Ingredients:

1 boxed chocolate cake mix
8 oz. soft cream cheese
1 egg
8 oz. MINI Chocolate Chips
1/2 tsp saltPreheat oven to 350 degrees.

In small bowl cream together, cream cheese, sugar and salt.
Add egg, fold in chocolate chips.
Set aside.

In large bowl, mix cake mix according to instructions on package.

Using cake mixture, fill each cupcake 3/4 full, and top with a small amount
approximately 1 teaspoon of cream cheese mixture. (Cream cheese mixture will automatically go to the middle of the cupcake during baking.)

Bake at 350 degrees for approximately 20 minutes.
Yields approximately 48 to 60 cupcakes, depending on how full you fill each.

If the cupcakes rise high and go over the top onto the pan, put less cake mix in each.

NOTE: You need MINI cupcake pans (not candy pans) and MINI cupcake paper holders.
