My name is Caroline. I started working in talent support at CNI about two months ago.

Even though it’s not autumn I decided to go with apple pie anyway, because I really enjoy baking (mostly because it leads to eating) and I like having an excuse to put maple syrup in things.

When I’m not baking, I’m getting crunk with my girls at Applebee’s, hangin’ at the mall eating CINNABON, and watching Space Jam.


Dutch Apple Pie
Ingredients:

Crust:
Prepared pie crust (for those of us who are not that ambitious)

Pie filling:
6-8 Granny Smith Apples (peeled, cored and sliced lengthwise)
1/2 cup granulated sugar
2 tablespoons of corn starch
2 teaspoons of cinnamon
2 tablespoons of maple syrup

Topping:
1 cup dark brown sugar
1 cup flour
2 teaspoons of cinnamon
1 teaspoon nutmeg
1 cup butter (room temperature, cut into pieces)

Optional:
1 scoop of desired ice cream

Instructions:
Preheat oven to 350.
Toss first four filling ingredients and place in prepared pie crust. Drizzle the maple syrup over this.
Combine first four ingredients of topping and mix in the butter with your fingers. Pile crumbs on top of filling to cover.
Bake for 40-45 minutes (cover the crust with tinfoil for the first 20 minutes so it doesn’t burn). Cool completely. Add ice cream. Eat it all.
